Identify environmental pathogen hazards
Evaluate exposed ready-to-eat product steps, employee handling, equipment, environment, and whether a later lethal treatment or formulation control exists. Document the rationale for hazards requiring preventive controls.
Establish appropriate sanitation controls
Develop sanitation procedures, practices, and processes that address relevant environmental pathogens and biological hazards due to employee handling. Define responsibilities and implementation records.
Develop a suitable environmental monitoring procedure
Where environmental monitoring is required as verification of sanitation controls under the applicable rule, establish scientifically appropriate procedures, including target organisms or indicators, sampling sites and frequency, test methods, laboratory arrangements, and response actions.
Respond to positive or adverse findings
Assess the finding, affected areas and product, potential routes of contamination, and immediate controls. Determine whether intensified cleaning, corrective action, resampling, or other steps are appropriate.
Verify and reanalyze the food safety plan
Review monitoring and corrective action records, verify implementation, and determine whether new information or significant changes trigger reanalysis under applicable requirements.
