PCQI: Why Fermented Food Manufacturers Need More Than a pH Control

Evaluate hazards from raw materials and the processing environment

Consider biological hazards associated with incoming ingredients, environmental exposure, employee handling, and packaging. Some raw materials may present parasite or viral hazards that fermentation does not adequately control.

Determine whether pH is an adequate control

Assess the specific organism, formulation, process conditions, time, temperature, water activity, and intended use. A pH limit alone may not control pathogen survival or contamination introduced after fermentation.

Validate the process preventive control

Establish scientific support for the process as designed and operated. Determine whether published evidence, expert evaluation, or a product-specific challenge study is appropriate.

Define meaningful monitoring and sampling

Specify the stage of measurement, sample representativeness, frequency, testing method, acceptance criteria, and action when results are out of specification.

Maintain calibrated instruments and reviewed records

Establish calibration procedures and frequencies appropriate to the instrument and use. Ensure records are reviewed within applicable regulatory timeframes and discrepancies are resolved.

Address sanitation and environmental contamination

Where environmental pathogens are hazards requiring control, establish appropriate sanitation preventive controls and verification, including environmental monitoring where appropriate.

Apply supply-chain controls to relevant ingredients

Where a hazard requiring a supply-chain-applied control is identified, establish approved supplier procedures and appropriate supplier verification.

Reassess the food safety plan and corrective actions

Investigate deviations, evaluate affected product, document root cause, implement corrective action, and reassess the plan when required.
